Orange Roughy With Vegetables

Ingredients
- 2 lbs orange roughy fillets
- 2 tablespoons lemon juice, divided
- 1 (16 ounce) can stewed tomatoes, cut
- 1 cup celery, minced
- 1 cup onion, chopped
- 1 cup bell pepper
- 1 cup mushroom, sliced
- 1⁄4 teaspoon thyme
- 1 pinch garlic powder
- 1 pinch hot pepper flakes
- 1 pinch hot pepper flakes
Directions
- Spray a 13x9-inch pan with non-stick cooking spray and sprinkle with 1 tablespoon lemon juice.
- Arrange fish in a single layer and sprinkle with 1 tablespoon lemon juice.
- Combine remaining ingredients and spoon over fish.
- Bake uncovered in a 350°F oven for 25-30 minutes, until fish flakes and sauce is thick.
