Orange-Raisin Bran Muffins

Wonderful fill-er-uppers. Keep some in the freezer and just pop out as needed.

Yields: 22 muffins

Ingredients

  • 2 12 cups all-purpose flour
  • 1  cup  Raisin Bran cereal
  • 1  cup sugar
  • 2 12 teaspoons baking soda
  • 1  teaspoon salt
  • 2  large eggs, beaten (or eggbeaters)
  • 1 12 cups buttermilk
  • 12 cup  oil
  • 12 cup  thawed  frozen orange juice concentrate, undiluted

Directions

  1. Stir all ingredients in bowl to mix well.
  2. Refrigerate overnight.
  3. Heat oven to 375.
  4. Grease 2" muffin tins or use paper fillers.
  5. Spoon batter into cups, filling each 2/3 full.
  6. Let batter stand 20-30 minutes until it reaches room temp.
  7. Bake 12-14 minutes until brown.
  8. This freezes well.
