Orange Marmalade Tarts With Cottage Cheese Pastry

Ingredients
- 1 cup cottage cheese
- 1 cup shortening
- 1 teaspoon vanilla
- 1 teaspoon salt
- 2 cups flour
- 3⁄4 cup orange marmalade
Directions
- Mix first 4 ingredients until smooth.
- Add flour and mix until combined.
- Form dough into flattened disk, wrap in plastic wrap, and chill several hours before using.
- Preheat oven to 375 degrees F when you begin to roll out dough.
- Roll dough into a rectangle, about 1/8” thick. Cut into 3” squares with pastry wheel.
- Put 1/2 to 1 teaspoon of orange marmalade in center of each square. Bring the corners together on top, and press together to make a peak.
- Place on baking sheet lined with parchment paper.
- Bake 20 minutes until light golden brown and crispy.
- Makes 3 dozen.
