Orange Marmalade Tarts With Cottage Cheese Pastry

Pastry squares filled with marmalade are one of my Dad's favorite old recipes that my Mom made. The pastry is so easy to make! It seems a little wet, but chill first and it will be easy to roll out. I sometimes roll it between 2 sheets of waxed paper so it won't stick. Another thick jam may be substituted if you don't have orange marmalade. Show more

Directions

  1. Mix first 4 ingredients until smooth.
  2. Add flour and mix until combined.
  3. Form dough into flattened disk, wrap in plastic wrap, and chill several hours before using.
  4. Preheat oven to 375 degrees F when you begin to roll out dough.
  5. Roll dough into a rectangle, about 1/8” thick. Cut into 3” squares with pastry wheel.
  6. Put 1/2 to 1 teaspoon of orange marmalade in center of each square. Bring the corners together on top, and press together to make a peak.
  7. Place on baking sheet lined with parchment paper.
  8. Bake 20 minutes until light golden brown and crispy.
  9. Makes 3 dozen.
