Orange Kale Salad

Ingredients
- 2 cups kale
- 1 mandarin orange
- 1⁄2 carrot, shredded
- 4 -5 radishes
- 1 tablespoon red wine vinegar or 1 tablespoon cherry balsamic vinegar
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
Directions
- Remove stems from kale and tear into bite site pieces.
- Shred carrot.
- Slice radishes in half and then into slices.
- Cut orange in half and cut skins from half segments.
- Toss vegetables and orange.
- Separately combine vinegar, oil, lemon juice, and salt. Whisk until combined, then pour over salad.
- Serve in two salad bowls.
