Orange Granita in Orange Cups

One time when my son and I were shopping at Costco, we saw these sorbets served in citrus and coconut cups. My son and I decided to try this with some granita we had made the previous weekend. This recipe is so much fun! It is simple, healthy, light, and most importantly...a blast for the kids. I make it my son's job to go into the freezer and scrape the granita (or orange ice cream as he calls it). Show more

Serves: 12

Ingredients

  • 2 12 cups  fresh squeezed  orange juice, reserve the orange rinds
  • 13 cup  superfine sugar, for the granita
  • 2  tablespoons  superfine sugar, for serving
  • 2  tablespoons honey

Directions

  1. Place orange juice, honey, and 1/3 cup superfine sugar into a saucepan. Bring to a boil and simmer 10 minutes.
  2. In the meantime, use left over oranges as the serving cups. Slice the bottom slightly to allow it to stand up in the freezer. Dip the rim of each orange slice in the additional 2TBS of sugar, as if you are rimming a cocktail glass. Place Orange Cups in the freezer.
  3. Pour hot orange juice mixture into a shallow dish and freeze. Check every hour, and scrape with a fork -- my son's favorite job! After about 4 hours, it will be ready to scoop into the orange cups to serve.
  4. The granita can also be served adult-style with a little vodka in a martini glass and a sprig of fresh mint.
