Orange-Glazed Carrots

I made this when my family came over for easter in place of brown-sugar, buttery carrots that my family usually makes. Everyone was skeptical at first, but they all ended up enjoying these.   1. Peel carrots and cut into 2-inch lengths, then halve them lengthwise.
  2. Place carrots in a large skillet with orange juice, salt and pepper.
  3. Bring to a boil, reduce to simmer, cover and cook 6 to 8 minutes, tossing ooccasionally.
  4. Uncover and cook until liquid is reduced to glaze, tossing occasionally. this should take 2 to 3 minutes.
  5. Mix in cilantro, serve immediately.
