Orange Ginger Beets With Carrots

Yields: 1-2 cups
Ingredients
- 1 large beet, peeled and julienned
- 1 carrot, scrubbed and julienned
- 1⁄4 cup orange juice
- 1⁄2 tablespoon orange ginger stir-fry sauce (VH)
- 1 tablespoon soy sauce
- 1⁄4-1⁄2 teaspoon ground ginger
- 1 -2 tablespoon minced crystallized ginger
- 2 tablespoons mandarin orange segments (in light syrup)
Directions
- Place all ingredients except mandarin oranges (first 7) in a parchment-paper lined loaf pan.
- Bake in a preheated 425* oven for about 30-40 minutes until desired tenderness is reached.
- Scatter mandarin orange segments overtop and bake for about 5 minutes longer until heated though.
