Orange Drops

Yields: 36 cookies
Ingredients
Dry Ingredients
- 2 cups flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt (I use kosher)
Wet Ingredients
- 2⁄3 cup shortening
- 3⁄4 cup sugar
- 1 egg
- 2 tablespoons orange zest
- 1⁄2 cup orange juice (I use freshly squeezed)
Icing
- 2 1⁄2 tablespoons butter, melted
- 1 1⁄2 cups powdered sugar, sifted
- 1 1⁄2 teaspoons orange juice (I use freshly squeezed, sometimes I have to add a bit more)
- 2 teaspoons orange zest
Directions
- Combine the dry ingredients and set aside.
- Mix wet ingredients in a stand mixer (or hand-held mixer).
- Mix in the dry ingredients with the wet.
- Drop the cookies using a small scoop and bake at 400 degrees F for 8-10 minutes.
- Mix up the icing and, once the cookies are cooled, ice and enjoy!
