Orange Corn Muffins

Ingredients
- 1 cup yellow cornmeal
- 1 cup flour
- 1⁄3 cup sugar
- 4 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 1⁄4 cup oil
- 1 teaspoon orange rind
Directions
- In a mixing bowl, combine all of the dry ingredients except the orange peel.
- In another bowl, combine all remaining ingredients.
- Add to cornmeal mixture, stirring until all the ingredients are combined.
- Fill greased and floured or lined muffin tins 2/3 full.
- Bake at 425 for 15 minutes.
