Orange Cookies

Ingredients

  • 23 cup butter, room temperature
  • 1  cup sugar
  • 2  eggs
  • 1  large orange
  • 2 14 cups flour
  • 12 teaspoon salt
  • 12 teaspoon baking soda
  • 12 cup walnuts, chopped (optional)
  • 1 12 cups powdered sugar, sifted
  • 3  tablespoons butter, room temperature
  • 1 12 tablespoons  orange juice
  • 2  teaspoons  orange peel, grated

Directions

  1. Preheat oven to 350-degrees F.
  2. Grease baking sheets.
  3. In a large bowl cream butter and sugar together until light.
  4. Stir in eggs, juice from orange and grated rind from orange.
  5. Stir in flour, salt, baking soda to combine.
  6. Stir in nuts, if using.
  7. Drop dough by spoonfuls onto prepared baking sheets.
  8. Bake for 10 minutes or until golden.
  9. Cool on rack while making icing.
  10. To make icing blend the remaining ingredients together (powdered sugar - orange peel) until smooth and then swirl icing over cookies, covering cookies completely.
