Orange Chile Jumbo Shrimp

These jumbo shrimp make an ideal appetizer or cold first course as well as finger buffet food. If you cannot find large shrimp, use the smaller ones, threading 3 or 4 onto the end of each toothpick. Time does not include marinating. Show more

  1. Peel the shrimp, removing the shell and legs. Rinse well and place in the bottom of a shallow dish.
  2. Combine the remaining ingredients and pour over the shrimp. Leave to marinate in the refrigerator for 2-3 hours.
  3. Pre-heat a non-stick griddle pan until hot. Place the shrimp in the pan and cook for 2-3 mins on each side, basting with the marinade during cooking.
  4. Once cooked, press a toothpick into each shrimp and place on a serving dish.
