Orange Chicken Breasts

Directions

  1. Place chicken breasts in small roaster with a drizzle of olive oil.
  2. Sprinkle paprika, onion powder, salt and pepper on top of chicken breasts.
  3. Slice mushrooms and place around chicken.
  4. Roast in oven at 375* with lid on for 30 minutes.
  5. Remove lid and roast for another 15 minutes.
  6. Remove breasts, place on plate and cover with tin foil.
  7. Drain grease from roaster but leave in juices.
  8. Add orange juice and chicken broth, give a stir and bring to a boil over medium heat.
  9. Boil down, about 5 - 10 minutes until a syrup sauce develops. Add 1 tsp butter and stir.
  10. Serve drizzled over chicken breasts and rice.
