Orange Chicken

  1. Combine orange juice, sherry, soy sauce, honey, garlic and shallot in a shallow glass dish.
  2. Add chicken and turn to coat.
  3. Refrigerate overnight, turning once.
  4. Place flour in shallow dish.
  5. Beat egg in another shallow dish.
  6. Remove chicken, reserving marinade.
  7. Dip chicken in flour, then in egg, then in flour again.
  8. Melt butter with oil in large skillet over medium heat.
  9. Add chicken and cook until browned and tender, 3-5 minutes per side.
  10. Remove chicken and keep warm.
  11. Add reserved marinade to skillet, scraping up any browned bits.
  12. Continue cooking until sauce thickens, about 5 minutes.
  13. Arrange chicken on platter and pour sauce over.
  14. Garnish with orange slices.
  15. Serve with steamed rice and asparagus.
