Orange Breakfast Pie

Yields: 1 Breakfast Pie

Ingredients

  • 2  cups low fat cottage cheese
  • 34 cup egg substitute (like Egg Beaters)
  • 2  tablespoons all-purpose flour
  • 23 cup sugar
  • 1  teaspoon  orange rind, freshly grated
  • 1  tablespoon  orange juice
  • 1  tablespoon  orange extract
  •  orange slice, garnish
  • 1  9-inch deep dish pie crust, thawed if using frozen shell

Directions

  1. Preheat oven to 350° F.
  2. In large bowl, beat cottage cheese on high speed with electric mixer for 1-1/2 minutes.
  3. Add eggs, sugar, flour, grated orange, orange juice, and orange extract; blend well.
  4. Pour into pie shell and bake for 50 minutes, or until a knife inserted comes out clean.
  5. Refrigerate overnight and serve chilled the next morning garnished with orange slices.
