Orange-Avocado Salad

I got this recipe from the Betty Crocker website and made it with my housemates as a side dish to Corn Casserole. Instead of making them in individual bowls we made it in our big salad bowl with all ingredients combined and it turns out quite nice. We all really liked it and think it would make a good summer salad as it's very refreshing. We were also thinking of adding nuts or sunflower kernels next time we try it. Show more

Serves: 4-6

Yields: 1 Salad

Ingredients

  • Orange Vinaigrette

  • 13 cup  vegetable oil (or olive oil as a healthier alternative)
  • 1  teaspoon  grated  orange peel
  • 14 cup  orange juice
  • 2  tablespoons sugar
  • 2  tablespoons lemon juice
  • 12 teaspoon ground mustard
  • 14 teaspoon salt
  • Salad

  • Salad Greens

  •  romaine lettuce, works nicely but any greens are fine
  • 3  oranges, peeled, sliced
  • 2  avocados, peeled, pitted and sliced
  • 6  thin slices red onions, separated into rings

Directions

  1. In tightly covered container, shake all vinaigrette ingredients until well blended. (Or just mix them up in a bowl which is what we did).
  2. On each of 6 salad plates, arrange salad greens. Top with oranges, avocados and onion. Serve with vinaigrette. (Or do it in one big bowl and everyone can serve as much or as little as they like).
