Orange -Almond Cake

This is a very easy and simple cake. There is a tiny bit of orange liquer and sugar sprinkled on the top and really make this special. I got this from an old Betty Crocker cookbook I found when cleaning out my mother-in-laws kitchen. I've adapted it to fit a lower fat diet. Show more

  1. Heat oven to 35o.
  2. Grease and flour square cake pan (8x8x2).
  3. Beat all ingredients until smooth, except almonds, 1 tablespoon sugar and the liquer.
  4. Pour into pan.
  5. Sprinkle with almonds.
  6. Bake 40-45 minutes, or until wooden pick inserted in center comes out clean.
  7. Sprinkle with tablespoon sugar.
  8. Poke holes randomly around top of cake and drizzle with liquer.
  9. Cook 10 to 15 minutes.
  10. Remove from pan and cool completly before cutting.
