Oprah's Turkey Meatloaf

One of Oprah's favorite low-fat recipes. Rosie Daley, Oprah's private cook uses ground turkey breast and a bit more flavor, oriental-style Panko breadcrumbs found in specialty food stores.   1. Heat oven to 350 degrees.
  2. Place mushrooms, onions and ¼ cup wine in medium nonstick skillet.
  3. Bring to a boil the reduce heat to medium-low, cover and cook for 10 minutes, stirring occasionally, until vegetables are tender.
  4. Meanwhile, combine ground turkey, breadcrumbs, parsley, 1 tbsp tomato paste, Worcestershire sauce, garlic, thyme, salt, pepper, oregano and egg in a large bowl.
  5. Stir in mushroom and onion mixture.
  6. Shape turkey mixture into a 8x5-inch loaf and place in a glass baking dish.
  7. Spread remaining 1 tbsp tomato paste over top of loaf; pour remaining ¼ cup wine into baking dish around meatloaf.
  8. Cover tightly with foil and bake 45 minutes until cooked through.
  9. Make lite gravy: Heat oil in small saucepan over medium heat.
  10. Stir in flour until smooth.
  11. Gradually whisk chicken broth.
  12. Bring to a boil and boil for 3-5 minutes until thickened.
  13. Season with pepper.
  14. Slice meatloaf and serve with Oprah’s classic potatoes.
