Onion Pie

  1. Preheat oven to 400 degrees F.
  2. Fry bacon until crispy.
  3. Remove from pan and drain on paper towel.
  4. Remove all but 1 tablespoon or so of bacon fat from the pan.
  5. Add the onions and cook until limp and transparent.
  6. Set aside.
  7. Beat the eggs until frothy then mix in the sour cream, flour, salt and pepper.
  8. Beat until well combined.
  9. Prick the pie shell evenly with a fork.
  10. Spread the onions evenly over the bottom of the pie shell and sprinkle with the bacon.
  11. Spread the sour cream mixture evenly over the top.
  12. Bake for 15 minutes at 400 degrees F.
  13. Reduce oven heat to 350 degrees F and bake for another 15 minutes or until pie is browned.
  14. Serve pie hot.
