One Pot Pasta

Ingredients
- 12 ounces pasta (spaghetti, rotini, penne)
- 28 ounces diced tomatoes (or 3 cups fresh tomatoes)
- 3 1⁄2 cups chicken broth
- 1 onion, sliced
- 2 cups spinach
- 4 garlic cloves, minced
- 1 cup sausage, sliced (optional)
- 1 1⁄2 teaspoons basil
- 1 1⁄2 teaspoons oregano
- 1⁄8 teaspoon red pepper flakes
- 1⁄8 teaspoon freshly cracked pepper
- 1 cup parmesan cheese, grated
Directions
- In a large pot over medium high heat, combine all ingredients except parmesan.
- Bring to a boil; reduce heat and simmer, uncovered, until pasta is cooked through and liquid has reduced, about 10 minutes.
- Stir in parmesan.
