One Bowl Dark Chocolate Cake

This recipe was made by Martha Stewart on The Chew show. It's a delicious light cake.

  1. Preheat oven to 350°F Grease a 9 x 13 pan then line with parchment paper. Grease paper then dust with cocoa, tapping out any excess.
  2. Whisk together cocoa, flour, sugar, baking soda, baking powder and salt in a mixing bowl.
  3. Add the eggs, the water, the buttermilk, the oil and the vanilla. With an electric mixer on low speed, beat until the batter is smooth, about 3 minutes.
  4. Pour into the pan and bake until a tester comes out clean, between 60 and 70 minutes. Cool the pan on a rack for 20 minutes, then turn cake out on the rack to cool completely.
  5. **Make your own buttermilk by using 1-1/2 cups of milk with 1 tablespoon of either lemon juice or white vinegar. Let it sit for several minutes before using.**.
  6. Cupcakes: Makes approximately 40 cupcakes. Fill cups 3/4 full then bake at 350 F for approximately 15 - 18 minutes, or until a cake tester comes out clean. I only bake 2 pans at a time, and rotate them halfway through the baking time.
