One Bowl Apple Cake

I found this recipe on Epicurious, but I've cut back dramatically on the sugar (from 1-3/4 cup to 1 cup), and substituted maple syrup for the sugar (2/3 cup maple syrup = 1 cup sugar). I also used 3 Granny Smith apples and 3 Gala apples rather than all Galas, making for a more complex flavor and texture. I don't do much baking, but this is easy and delicious! Show more

  1. Preheat oven to 350°.
  2. In a large bowl, mix the eggs, sugar, cinnamon and oil.
  3. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.).
  4. Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients.
  5. Pour mixture into a greased one 9"x13" or two 9″ round pans.
  6. Bake for approximately 55 minutes.
