OMGosh..Mashed Potato, Cheese Steah and What?

  1. Peel, chop and boil potatoes to make mashed potatoes. Approximately 30 minutes. (Left over mashed potatoes works best).
  2. If not using left over mashed potatoes add butter and milk and mash.
  3. Sauté rib eye meat in a skillet over medium heat with a splash of water to keep it cooking evenly. If adding onions, now's the time for that.
  4. Add cheese to meat when cooked.
  5. Now it's time to make the platter. You're going to fry the potatoes. Making it individually is easier. I take a mound of potato per person and place in a hot, lightly buttered pan over medium to high heat. Cook for 3-5 minutes until a crust forms. Flip and do the same on the other side.
  6. While potatoes are frying in a separate pan cook the eggs to an over light consistency. You are going to want the yoke to explode all over the potato and steak meat.
  7. Now, take each potato mound and place on a plate. Top with cheese steak mixture and now the egg over light on top. ENJOY!
