Oly Bolen - Dutch New Years Donuts (Oliebollen)

Ingredients
- 8 cups flour
- 6 tablespoons sugar
- 4 teaspoons salt
- 2 tablespoons fast rising yeast
- 3 cups warm water (105 degrees F)
- 1 teaspoon vanilla
- 4 eggs
- 4 cups raisins
- 2 cups icing sugar
- vegetable oil (enough to deepfry)
Directions
- Take 2 cups of flour and thoroughly mix in sugar, yeast, and salt.
- Mix separately water, vanilla and eggs. Pour into flour mixture a bit at a time.
- Stir in raisins.
- Grease a big bowl, put dough in bowl and cover with a damp tea towel and plastic bag. Let rise for 1 1/2 hours.
- Heat oil or deep fryer to 370 degrees F. Drop heaping tablespoons into 2 1/2 - 3 inches o oil. Cook until they have a light brown color to them.
- Remove from oil and dip or sprinkle in icing sugar, and lay on paper-towel covered cookie sheets. Serve immediately!
