Olive and Arugula Flatbread Pizza Salad

Ingredients
- flatbread pita bread or Italian bread
- 2 teaspoons extra virgin olive oil
- 2 tablespoons extra virgin olive oil
- 1 teaspoon fresh lemon juice
- 1 teaspoon red wine vinegar
- 2 cups baby arugula leaves
- 1⁄4 cup olive tapenade
- 6 pimiento stuffed green olives, sliced
- 1 ounce parmesan cheese, shaved
- salt & freshly ground black pepper
Directions
- Brush bread with 2 teaspoons olive oil.
- In a jar, combine 2 tablespoons olive oil, lemon juice, vinegar, 1/4 teaspoon salt and 1/8 teaspoon black pepper; shake to combine.
- Toss dressing with arugula.
- Grill flatbreads, over medium heat, until golden brown, 1 or 2 minutes, turning once.
- Spread grilled flatbreads with olive tapenade, leaving a two inch border.
- Top with arugula, olives, and Parmesan.
