Olie Bollen

These are a Dutch New Year's tradition (but you can make them any time if you like deep fried apple and raisin yeast doughnut balls). Show more

Yields: 36-48 Balls

Ingredients

  • 4  cups flour
  • 4 12 teaspoons  yeast
  • 1  teaspoon salt
  • 14 lb raisins
  • 14 lb apple, chopped
  • 12 cup  lukewarm water
  • 2  cups milk
  • 2  eggs, slightly beaten
  • 14 cup sugar
  •  deep fry  oil

Directions

  1. Mix flour, sugar, salt, and yeast.
  2. Add liquid and eggs.
  3. Let rise 30-45 minutes.
  4. Add remaining ingredients.
  5. Drop by tablesponfuls into hot oil in deep fat fryer heated to 375 degrees. As they cook on one side they will typically turn on their own to the other side. Cook until brown.
  6. Remove from oil onto paper towels.
  7. Place into bowl with granulated or powdered sugar.
  8. Cover the bowl and shake gently to coat the olie bollen.
  9. Serve warm.
