Old Sussex Potato Cheese Cakes

Serves: 4-6

Ingredients

  • 12 lb potato
  • 4  ounces flour
  • 2  ounces  grated cheese (white cheddar would be my choice)
  • 1  egg
  • 1  tablespoon butter, softened
  • 14 teaspoon salt

Directions

  1. Preheat oven to 375°F.
  2. Cook and mash potatoes and transfer to a medium bowl. Add flour, cheese, egg, butter, and salt and mix well.
  3. Transfer mixture to a floured board. Roll mixture into balls and squash flat. Transfer to a non-stick baking tray.
  4. Bake in preheated oven for 12 minutes. Serve immediately.
