Old Lisbon Cod

Ingredients
- 600 g cod
- 4 garlic cloves, sliced
- 1 cup seasoned bread crumbs
- 6 boiled potatoes
- 1 cup olive oil
- 1 lemon, juice of
- parsley, for garnish (optional)
- 1 dash Tabasco sauce (optional)
Directions
- Boil potatoes in salted water until cooked, drain and put in a deep serving dish.
- meanwhile cut Cod into serving pieces and cook in a pan with water for 3 to 4 minutes.
- then drain well and put aside.
- heat olive oil in pan until hot, add garlic slices and remove from heat.
- dip Cod in olive oil and garlic mixture, do NOT throw out this olive oil.
- add 1 tablespoon of the olive oil/garlic to another pan and place cod in it.
- top cod with bread crumbs and fry for 6 to 8 minutes.
- when done place cod in serving dish with potatoes, and pour all the olive oil over it.
- garnish with parsely.
- when serving squeeze lemon juice over cod and potatoes and add a few dashes of tabasco sauce if desired.
