Old Lisbon Cod

A simple Cod dish from the Lisbon region. From My Portuguese Cookbook.

  1. Boil potatoes in salted water until cooked, drain and put in a deep serving dish.
  2. meanwhile cut Cod into serving pieces and cook in a pan with water for 3 to 4 minutes.
  3. then drain well and put aside.
  4. heat olive oil in pan until hot, add garlic slices and remove from heat.
  5. dip Cod in olive oil and garlic mixture, do NOT throw out this olive oil.
  6. add 1 tablespoon of the olive oil/garlic to another pan and place cod in it.
  7. top cod with bread crumbs and fry for 6 to 8 minutes.
  8. when done place cod in serving dish with potatoes, and pour all the olive oil over it.
  9. garnish with parsely.
  10. when serving squeeze lemon juice over cod and potatoes and add a few dashes of tabasco sauce if desired.
