Old Fashioned Rice Pudding

Ingredients
- 2 eggs, beaten
- 4 cups milk
- 1⁄2 cup sugar
- 1 tablespoon butter
- 1 teaspoon vanilla essence
- 1⁄2 cup raisins (optional)
- 1⁄8 teaspoon ground nutmeg
- 1⁄2 cup uncooked white rice
Directions
- Preheat oven to 300°F.
- Grease a 2-quart casserole dish.
- Beat eggs and add milk.
- Stir in sugar, uncooked rice, butter, vanilla essence, raisins and nutmeg.
- Pour into the prepared pan.
- Bake uncovered for 2 1/2 hours and make sure to stir frequently during the first hour.
- Serve warm/cold as per your choice.
