Old-Fashioned Peach Preserves

Made the way Grandma used to!

  • 2  quarts  peaches
  • 6  cups sugar

Directions

  1. Slice, peel, ripe hard peaches (about 10 large).
  2. Combine fruit and sugar; let stand about 12 to 18 hours (overnight is better) in a cool place.
  3. Sterilize canning jars.
  4. Bring fruit and sugar mixture slowly to bowling, stirring frequently. Boil gently until fruit become CLEAR and syrup thick, about 40 minutes.
  5. As mixture thickens, stir frequently to prevent sticking.
  6. Skim (if necessary).
  7. Pour hot preserves into jars, leaving 1/4-inch head space.
  8. Wipe jar rims and adjust lids.
  9. Process 5 minutes in a boiling water bath.
  10. Makes about 7 half-pints jars.
