Old-Fashioned Peach Butter

Yields: 8 half pints

Ingredients

  • 2  quarts  diced peeled  peaches (very ripe)
  • 4  cups sugar

Directions

  1. Place half of peaches into container of an electric blender; process until coarsely chopped.
  2. Pour into a flat-bottomed kettle.
  3. Repeat procedure with remaining peaches.
  4. Stir in sugar.
  5. Cook over medium low heat, stirring frequently 30 minutes or until mixture thickens.
  6. Quickly ladle butter into hot sterilized jars, leaving 1/4 inch headspace.
  7. Cover at once with metal lids and screw bands tight.
  8. Process in boiling water bath 5 minutes.
