Ingredients
- 1 cup seedless raisin
- 1 cup water
- 3⁄4 cup soft shortening (not butter)
- 2 eggs
- 1 1⁄2 cups sugar
- 1 teaspoon vanilla
- 2 1⁄2 cups flour
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon clove (optional)
- 1 teaspoon baking soda
- 2 cups rolled oats
- 1 teaspoon salt
- 1⁄2 cup chopped nuts
Directions
- Simmer the raisins and water in saucepan over low heat, until plump, 20 to 30 minute Drain raisin liquid into measuring cup. Add water to make ½ cup. Heat oven to 400 degrees.
- Cream shortening, sugar, eggs and vanilla. Stir in raisin liquid.
- Blend flour, baking powder, soda, salt and spices. Stir into wet ingredients. Add oats, nuts and raisins. Drop rounded teaspoons full onto ungreased baking sheet. Bake 8 to 10 minutes. Makes 6 to 7 dozen.
