Old Fashioned Oatmeal Casserole

  1. Lightly toast walnuts and set aside.
  2. Preheat oven to 350 degrees.
  3. Coat a 1 1/2 quart casserole dish with butter or margarine substitute.
  4. In a medium saucepan, bring the soy milk (or substitute) and butter to the boil. Slowly stir in the oats with a fork.
  5. Stir in the apple and/or pears, dried fruit of choice, toasted walnuts, 2 tablespoons brown sugar, vanilla extract if using, cinnamon, and the salt.
  6. Cook mixture, stirring constantly for 1 minute. Be careful not to burn! Pour the oatmeal mixture into the prepared casserole dish.
  7. Bake, uncovered for 15 minutes. The last 5 minutes of cooking, sprinkle the remaining 1 tablespoon of brown sugar on top and bake until the top is bubbly.
  8. Serve warm with additional warmed soymilk or milk served on the side if you wish.
  9. For vegan use soy milk, rice milk and soy margarine options.
