Oj Oj (African Yam Fritters)

Serves: 4-6

Ingredients

  • 4  yams (sweetpotato or wateryam tuber)
  • 1  medium onion
  •  cilantro (hand full-chopped)
  • 12 cup flour
  • 2  eggs
  •  salt & freshly ground black pepper
  •  oil

Directions

  1. Peel and grate yams, squeeze out any excess water; add egg, flour, onion and cilantro; season with salt and pepper.
  2. Heat about 1 " of oil in skillet; Drop yam mixture by large spoonfuls into hot oil; cook 3-4 minute on each side or until golden brown.
