Oh Boy Waffles

Yields: 12 large pancakes
Ingredients
- 2 1⁄2 cups flour
- 4 teaspoons baking powder
- 3⁄4 teaspoon salt
- 2 tablespoons sugar
- 2 eggs
- 2 1⁄4 cups milk or 2 1⁄4 cups combination of milk and water
- 3 tablespoons melted shortening, bacon drippings or 3 tablespoons vegetable oil
Directions
- In a large bowl, preferably one with a handle and a pouring spout, mix together the first four ingredients. I use a whisk.
- In a separate, smaller bowl, again with a handle and a pouring spout if it's available, beat the two eggs into the milk or milk and water combination, then add and mix in the melted shortening, bacon drippings or vegetable oil.
- Pour the wet ingredients into the dry ingredients and mix with a firm whisk, just until combined. Mixture will be lumpy.
- Pour onto heated nonstick waffle iron or griddle. Serve hot, or re-heat leftover waffles in a toaster.
