Oatmeal Pie

A recipe shared by Jan Garrabrandt of The Artist's Inn and Gallery in Terre Hill, Pennsylvania, this oatmeal pie is a little different from many in that it includes both coconut and pecans... not one or the other. I haven't tried it yet, but it looks so good and simple I know I'll be making it soon.

• Yields: 1 pie

Ingredients

• 3  eggs, beaten
• 2⁄3 cup sugar
• 1  cup brown sugar
• 2  tablespoons butter
• 2⁄3 cup coconut
• 2⁄3 cup oats
• 2⁄3 cup milk
• 1  teaspoon vanilla
• 3⁄4 cup  chopped pecans
• 9  inches  pie crusts, unbaked

Directions

1. Mix all ingredients and pour into unbaked pie shell.
2. Bake at 350 degrees until toothpick comes out clean (approximately 45 minutes).
