Oatmeal Muffins

Yields: 12 muffins
Ingredients
- 1 cup flour
- 1⁄4 cup sugar
- 1 beaten egg
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 cup quick-cooking oats
- 1 cup water
- 3 tablespoons corn oil
- 1⁄4 teaspoon nutmeg or 1⁄4 teaspoon cinnamon
Directions
- Mix the egg, water, and oil in a measuring cup.
- Mix the dry ingredients in a bowl.
- Stir wet ingredients into dry.
- Stir just until everything is moistened.
- Leave small lumps!
- Grease muffin tins, or use paper muffin liners.
- Fill each cup 2/3 full.
- Bake at 425 for 15 mintues.
