Oatmeal Craisin Deliciousness

Ingredients
- 1⁄2 cup sugar
- 1⁄2 cup brown sugar (I mixed dark brown sugar and light brown together)
- 1⁄2 cup butter, softened
- 1 large egg
- 1⁄2 teaspoon vanilla extract
- 1⁄4 teaspoon almond extract
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 3⁄4 cup flour
- 1 1⁄2 cups oatmeal, quick cooking not instant
- 1⁄2 cup sliced almonds
- 1 cup white chocolate chips
Directions
- Preheat oven to 375.
- In a large bowl, cream together butter, and both sugars.
- Add in egg, vanilla extract, and almond extract; mix until well combined.
- Add in cinnamon, baking soda, salt, and flour; mix well.
- Fold in by hand oatmeal, almonds, craisins, and white chocolate chips. Make sure all ingredients are blended in well.
- Form into 1 inch balls, or drop by tablespoonfuls, or any size you prefer, onto a lightly greased cookie sheet. Bake for 10 - 12 minutes.
- Remove from oven, let stand on cookie sheet approximately 2-3 minutes, remove to cooling rack to finish cooling. Store in an airtight container.
