Oatmeal Cookies With Zucchini

Ingredients
- 1⁄2 margarine or 1⁄2 butter
- 3⁄4 cup honey
- 1 egg
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 1⁄2 teaspoons cinnamon
- 1⁄4 teaspoon ground cloves
- 1 teaspoon nutmeg
- 1⁄4 teaspoon salt
- 1 cup grated zucchini
- 1 cup quick-cooking oats
- 1 cup raisins
- 1 cup chopped pecans
Directions
- Preheat oven to 375 degrees. Grease your cookie sheet.
- In a large bowl, cream margarine with honey, add the egg and beat well. Into a medium bowl, or onto a large piece of wax paper, sift flour with baking soda, cinnamon, cloves, nutmeg and salt. Mix into the butter mixture, half of the flour mixture, then half the zucchini. Repeat, mixing until just combined. Stir in the oats, raisins and pecans. Drop by rounded tablespoonfuls onto prepared cookie sheet. Bake for 10-12 minutes.
