OATMEAL COOKIES WITH CRANBERRIES, CHOCOLATE CHIPS AND WALNUTS

Ingredients
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1 cup butter (softened) or 1 cup oleo (softened)
- 1⁄2 cup light brown sugar (packed)
- 1⁄2 cup granulated sugar
- 1 egg
- 1 1⁄2 teaspoons vanilla extract
- 1 cup oatmeal
- 1⁄2 cup semi-sweet chocolate chips
- 1⁄2 cup dried cranberries
- 1⁄2 cup chopped walnut pieces

- Directions.
- 1. In a small mixing bowl, blend flour, baking soda and baking powder.
- 2. In a large mixing bowl, beat butter/oleo with sugars until fluffy. Beat in egg and vanilla.
- 3. Beat in flour mixture at low speed until blended.
- 4. Stir in oatmeal, walnuts, chocolate chips and Cranberries.
- 5. Cover and chill for at least 1 hour.
- 6. Line parchment paper on baking pan (works better than greasing the pans & less cleanup and the cookies come off the parchment paper easily without sticking).
- 7. Put spoonful of cooking mix about 2” apart. Sprinkle a tiny bit of flour on top and smash down to flatten. (I prefer them flattened—You can leave them rock shape if you prefer).
- 8. Preheat oven to 350˚.
- 9. Bake for 12 minutes.
- 10. Remove pan from oven and let cookies cool for 1 to 5 minutes before transferring to cooling rack.
- 11. Makes approximately 36 to 38 cookies.
