Oatmeal Cookies

Ingredients
- 1⁄2 cup vegetable shortening
- 1⁄2 cup butter or 1⁄2 cup margarine
- 3⁄4 cup packed brown sugar
- 1⁄3 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1⁄3 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 cups rolled oats
- 1 cup raisins
- 1 cup chopped dates
- 1 cup chopped walnuts
Directions
- In medium mixing bowl cream shortening, butter, brown sugar and granulated sugar.
- Add egg and vanilla extract.
- Beat until light and fluffy.
- Add flour, soda, salt and oats.
- Mix well.
- Stir in raisins, dates, and chopped nuts.
- Drop by heaping teaspoons onto ungreased cookie sheets.
- Bake in preheated 325F degrees CONVECTION OVEN for 12-15 minutes or bake in preheated 350F degrees RADIANT BAKE OVEN for 12-15 minutes , or until light golden brown.
- Repeat with remaining dough.
- Cool on wire racks.
