Oatmeal Cookie Pancakes

  1. Mix the dry ingredients in a bowl and set aside.
  2. In a another bowl, mix the next four wet ingredients.
  3. Whisk the wet ingredients into the dry until just combined, then fold in the mashed up bananas.
  4. Stir in the melted butter.
  5. Heat a griddle over medium heat, then spray with cooking spray.
  6. Cook pancakes, about 1/3 cup for each one, until bubbles form on the top, then flip.
  7. Pancakes will cook about 2 minutes on each side.
  8. Serve warm with syrup.
