Oatmeal Coconut Chocolate Chip Cookies

Ingredients
- 1 cup all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 2 cups oatmeal
- 1 cup shredded coconut
- 1⁄2 cup butter
- 1⁄2 cup brown sugar
- 1⁄2 cup sugar
- 1 large egg
- 1⁄4 cup maple syrup
- 1 teaspoon rum extract
- 5 ounces chocolate chips
Directions
- Preheat oven at 350*.
- Cream Butter & sugars.
- Add eggs and mix.
- Add extract.
- In a separate bowl, mix dry ingredients.
- Slowly mix dry with wet.
- Refridgerate 30 minute.
- Line cookie sheets with silpat or parchment paper.
- Drop by rounded spoonfuls
- Bake for 9 minute.
