Oatmeal Chocolate Chip Cookies

Ingredients
- 1 1⁄2 cups packed brown sugar
- 1 cup butter or 1 cup margarine, softened
- 1 teaspoon vanilla
- 1 egg
- 2 cups quick-cooking oats
- 1 1⁄2 cups unbleached flour
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup chopped nuts, if desired
Directions
- Preheat oven to 350 F
- In a large bowl, beat brown sugar, butter, vanilla and egg with electric mixer on medium speed until blended.
- add oats, flour,baking soda and salt mix well.
- stir in chocolate chips and nuts.
- On ungreased cookie sheet drop dough on rounded tablespoon about 2 inches apart.
- Bake 9 to 11 minute or until golden brown.
- let cool remove from cookie sheet
- makes 3 1/2 dozen.
