Oatmeal Chocolate Chip Cookies

This is a variation of a standard chocolate chip cookie recipe. The oat flour gives the cookies a little extra crunch, but they are still soft and chewy. I had to taste test several before I let anyone else have any. Cooking time is per sheet. Show more

Directions

  1. Put oatmeal into a food processor and pulse until flour- like texture.
  2. Cream butter and sugars together.
  3. Add egg and vanilla. Beat until smooth.
  4. Add flours and baking soda, mix until blended.
  5. Add chocolate chips.
  6. Drop by tablespoonfuls onto cookie sheets. I use a cookie scoop.
  7. Flatten cookies slightly.
  8. The dough can be frozen at this point, you can either bake from frozen or thaw and bake.
  9. Bake at 350 for 8-10 mins for soft cookies, 10-12 mins for crunchier cookies.
