Oatmeal, Chocolate Chip Cookie Style

Every year at Christmas my friend's mom used to make delicious oatmeal cookies with chocolate chips and orange rind. I invented this recipe to replicate the taste. Show more

  1. Combine oats and water and cook as directed on the canister -- usually about a two-to-one ratio of water to oats, stirring frequently. Rolled oats only take about five minutes to cook and are so much better than instant -- the oatmeal is not mushy or slimy and has a delicious nutty taste.
  2. While the oatmeal is cooking, grate in the rind of one small orange, using the corse (large) grain.
  3. Sprinkle in a little nutmeg and stir in walnuts.
  4. When the oatmeal is almost done, add a spoonful of orange marmelade and stir.
  5. Put the oatmeal in a bowl, and top with five chocolate chips (or however many you want!). Don't stir, just let them get all melty on top of the oatmeal.
  6. Enjoy.
