Oatmeal Cake

Ingredients
- 1 1⁄2 cups boiling water
- 1 cup quick-cooking oats
- 1 cup brown sugar
- 1⁄2 cup shortening
- 2 eggs
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
Icing
- 1⁄2 cup butter
- 1⁄2 cup brown sugar
- 1 teaspoon vanilla
- 1⁄4 cup evaporated milk
- 1 cup chopped pecans or 1 cup walnuts
- 1 cup shredded coconut
Directions
- Stir oats in the boiling water, let stand for 20 minutes. Cream shortening, sugars, eggs. Sift flour together with salt, cinnamon Add to creamed mixture. Add oatmeal, mix well.
- Bake in a well greased pan in 350°F oven for 25-30 minutes.
- While cake is baking melt together in a sauce pan the icing ingredients.
- While cake is still warm, spread icing over the top of the cake and put under broiler till bubbly and brown about 5 - 10 minutes.
