Oatmeal Brown Sugar Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup light brown sugar
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 cup low-fat sour cream
- 5 tablespoons butter, softened
- 2 large eggs
- nonstick cooking spray
Directions
- Mix together the first five ingredients (the dry ingredients) in a medium bowl.
- In a separate bowl combine the next three ingredients (the wet ingredients) and mix well.
- Stir the wet ingredients into the dry ingredients. Blend well. Cover and refrigerate overnight.
- Preheat the oven to 375 degrees F. Divide mixture into a 12-cup muffin pan that has been sprayed with the nonstick spray.
- Bake for 20 to 30 minutes, until a toothpick inserted in the center of one muffin comes out clean. Allow to cool slightly before removing muffins from the pan.
