Oatmeal Apple Butter Muffins

Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1⁄2 cup apple butter
- 2 eggs
- 1 cup flour
- 1⁄2 cup light brown sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
Directions
- Preheat oven to 400°.
- Combine oats, milk, apple butter, and eggs.
- In a separate bowl combine flour, brown sugar, baking powder, baking soda, and salt.
- Mix the wet into the dry just until combined.
- Spoon into muffin tin, either greased or lined, ~1/4 cup per muffin.
- Bake for 20-25 minutes.
- Let cool & enjoy. These freeze well.
