Oat Flour Blueberry Breakfast Cake

Ingredients
- 2 cups oat flour (grind oatmeal in food processor)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 cup vegetable oil
- 1 cup water
- 1⁄4 cup nonfat milk
- 1⁄4 cup honey
- 1 cup blueberries
Directions
- Preheat oven to 375. Spray (grease) small cake pan.
- Sift together flour, baking powder, soda, and salt. Add vegetable oil, water, milk, honey and wisk. Add blueberries. Pour into cake pan.
- Bake 15-20 minutes.
- Makes 6 servings.
