Oat Bran Muffins

Ingredients
- 2 cups quaker oat bran hot cereal, uncooked
- 1⁄4 cup brown sugar, firmly packed
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 cup skim milk
- 2 eggs, slightly beaten
- 1⁄4 cup honey or 1⁄4 cup molasses
- 2 tablespoons vegetable oil
Optional Additions
- 1 cup raisins (optional) or 1⁄2 cup fresh blueberries (optional) or 1⁄2 cup frozen blueberries (optional)
Directions
- Heat oven to 425*.
- Line 12 medium muffin cups with paper baking cups or spray bottoms only with no stick cooking spray.
- Combine the dry ingredients; mix well.
- Add combined milk, eggs, honey and oil; mix just until moistened.* Fill prepared muffin cups ¾ full.
- Bake 15 to 17 minutes or until golden brown.
- Yield: 12 muffins.
